High Protein Creamy Garlic Parmesan Chicken & Rice
A creamy, high-protein chicken and rice meal prep featuring garlic, parmesan, and spinach for a flavorful and nutritious dish.
Ingredients
- •1.2KG Thinly Sliced/Butterflied Chicken Breast (raw weight)
- •1 Tsp Olive Oil
- •1 Tsp Garlic Powder
- •1 Tsp Salt
- •1 Tsp Smoked Paprika
- •30g Light Butter (Nuttelex Light)
- •1/2 Diced Brown Onion
- •6 Diced Garlic Cloves
- •150ml Chicken Broth
- •400ml Fat Free Evaporated Milk (Carnation Light & Creamy)
- •1 Tsp Oregano
- •1 Tsp Onion Powder
- •1 Tsp Smoked Paprika
- •1 Tsp Chicken Stock Powder
- •45g Freshly Grated Parmesan Cheese
- •80g Light Cream Cheese
- •Chopped Spinach
- •320g Washed White Rice (uncooked weight)
- •700ml Chicken Broth
- •1 Tsp Chicken Stock Powder

Heat olive oil in a large pan over medium heat.

Season chicken breast with garlic powder, salt, and smoked paprika.

Cook chicken in the pan until browned and cooked through, then set aside.

In the same pan, melt light butter and sauté diced brown onion and garlic cloves until translucent and fragrant.

Add chicken broth, fat free evaporated milk, oregano, onion powder, smoked paprika, and chicken stock powder to the pan; stir to combine.

Add grated parmesan cheese and light cream cheese; stir until creamy and smooth.

Return cooked chicken to the pan and mix well with the sauce.

Add chopped spinach and cook until wilted.

In a separate pot, cook washed white rice with chicken broth and chicken stock powder until rice is tender and broth is absorbed.
